TYPICAL LOCAL PRODUCTSThe old traditions of the Garfagnana kitchen allow us, even today, to taste recipes that are both simple and healthy, with flavours that have long been forgotten. They are usually cooked using local aromatic herbs such as thyme, rosemary, sage, mint, gnepitella, orbaco. Typical products:CHESTNUTS - Ground down to achieve a sweet flour which is then used to make cakes, polenta, frittele, pasta etc. FARRO - An ancient cereal which is used to make wonderful soups cakes and pasta. TROUT - The abundance of clean stream water enables the farming of quality trout.
CHEESE - The excellent cheeses are made with both sheep's milk and cow's milk. PORCINI MUSHROOMS - These can be found either fresh or dried and are cooked by frying in a sauce or by grilling. They are very much sought after and are best with pasta or rice. HONEY - Excellent quality, Acacia and Millefiori. BREAD - The typical bread of the Garfagnana is made with potatoes and baked in a wood fire. PORK PRODUCTS - Ancient flavours are - the Biroldo, the Salciccia, the Coppa and the Mondiola. |
